Quinoa Pilaf
Quinoa Pilaf is a great vegan meal option. It is a wonderful way to recreate a classic rice pilaf dish. The quinoa brings out a unique flavor, a bit more nutty than rice. Quinoa is considered a super food protein which is gluten free, high in magnesium, iron, and calcium. The down side is that it contains more calories than brown rice, so enjoy with caution.
Ingredients:
1 cup quinoa
2 cups water
1/2 teaspoon salt
1 onion chopped
2 cloves of garlic
4 celery stalks, chopped
1 cup chopped carrots
1 tablespoon olive oil
1 teaspoon turmeric
Salt
Pepper
Directions:
Cook the quinoa with water and salt until all the water has evaporated.
In a non stick pan add the olive oil, onion and celery, and sauté until tender. Add garlic and carrots, salt and pepper. Sauté for few minutes, then add the turmeric, and sauté for a couple more minutes. Add the cooked quinoa and mix until the flavors are evenly distributed. Serve immediately.
