Parsley Pear Salad
Parsley is one of the healthiest greens around. It is loaded with iron and vitamins such as vitamin K, C, and B12. It is a great source to boost your immune system. Not only it is good for you, but it is also so delicious! It goes well with seeds, nuts and pear or any other fruit of your choice. Super refreshing summer salad.
Ingredients
1 bunch of flat leaf parsley, chopped
1 bunch of curly parsley, chopped
1 pear, thinly cubed
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup candied walnuts, chopped
Dressing:
juice of 1 orange
Juice of 1/2 lemon
1 tablespoon pure maple syrup
3 teaspoons olive oil
+Salt
+Pepper
Directions
In a bowl add all the salad ingredients.
In another bowl mix all the dressing ingredients. Pour the dressing over the salad, mix and serve.
TIP
you can switch the pear with dried cherries, or fresh apple, or dried cranberries. whatever you have in hand.
