Indian style Black lentils soup
Black lentils are quick and easy to prepare. They are available year-round. Lentils are legumes along with other type of beans and retain their shape after cooking.
When I think about lentils, I think Indian. Lentils with warm Indian spices are a perfect combination! They complement each other nicely, and bring out the best flavors.

Ingredients:
3 celery stalk thinly chopped
1 teaspoon olive oil
1 large clove of garlic minced
1 tablespoon cumin seeds
1/2 teaspoon garam masala
1/2 teaspoon ground coriander
Salt
Pepper
1/3 cup tomato paste
3 cups water
2 cups soaked black lentils
1 teaspoon agave
Directions:
In a soup pot add olive oil and celery stalk, sauté for few minutes, add garlic, cumin seeds, garam masala, coriander, salt and pepper, when you start smelling the aroma of the spices, add the tomato paste, and keep mixing for another minute, then add the lentils, mix. lastly add the water. Bring to a boil and then simmer for at least 40 minutes- until the lentils are tender and all the flavors incorporated well.
