Baked okra

Okra is one of my favorite vegetables! Not only does it have  many health benefits like fiber (which is good for cholesterol management). 

It also contains folic acid, vitamin B, and vitamin A. It is low in calories, and one of the green vegetable with the highest levels of antioxidants. The okra is a good source of important minerals such as iron, calcium and magnesium.

Baked okra are the newest hit in our house!

Great as a snack, side dish, or as an appetizer!

It is crunchy and yummy!

Ingredients:

1 bag of frozen cut okra 16oz/454g

Olive oil

Panko bread crumbs

Salt

Pepper

Sweet paprika

Garlic powder

 

Directions:

Heat oven to 375F

Defrost the okra and strain the excess water

Take a baking sheet and spray with olive oil

In a bowl add bread crumbs.

In another bowl add the thawed okra, drizzle with olive oil, salt, pepper and paprika. Mix well. Then, dip the okra pieces in the bread crumbs bowl.  Place the okra in the greased baking sheet, spray with olive oil and bake  until golden brown. (About 20-25 minutes).
