Red quinoa and baby kale salad
Ingredients:
2 cups baby kale
2 cups cooked red quinoa (usually its 2 parts water on 1 part quinoa, I like to add salt to the water, to flavor the quinoa)
1 cup cooked chickpeas
1 apple cut into cubes
1/2 cup diced red bell pepper
Dijon mustard vinaigrette:
1/8 cup olive oil
1/2 tablespoon balsamic vinaigrette
1 tablespoon Dijon mustard
11/2 teaspoon honey
Salt
Pepper
