Chopped Raw Brussels Sprouts Slaw with Apple and Dried Plums
Another great way to eat your greens! Different than any other chopped salad you've ever eaten, and it's so good! (Even better to eat it the next day, so all the flavors soak in!) The combination of the chopped Brussels sprouts with the sweetness of the apple and the dried plums is awesome!
The dressing I created brings up so much of the flavors of the salad- especially using the zest of the clementines!
Ingredients
About 6 cups of thinly chopped fresh Brussels sprouts
1 apple peeled and cubed
9 seedless dried plums- sliced
Dressing:
Zest and juice of one lemon
Zest and juice of 2 cuties clementines or zest and juice of one orange
1 tablespoon pure maple syrup
1 tablespoon vegan mayonnaise
1 teaspoon olive oil
+Salt
+Pepper
Directions:
Mix all the salad ingredients.
Mix all the dressing ingredients. Pour the dressing over the salad and serve.
The salad is excellent also the next day, when the dressing soaks into the Brussels sprouts and into the apples! Divine!
