Cooked fresh beans

The first time I saw fresh beans was a couple of days ago at a local farm.

I took my kids to a pumpkin patch and while they ran around in the corn maze, I checked out the local produce. I saw these beautiful pods, with white and purple tie-dye-like lines. So pretty! I got so excited, and immediately filled up a bag and cooked up this yummy dish!

Very recommended! If you ever have the chance to buy fresh produce in season, do it! The flavors are absolutely amazing!

 

Ingredients:

1 medium onion chopped

1 clove of garlic chopped

I teaspoon olive oil for sauté

3 cups fresh white beans 

3 cups boiling water

2 tablespoon tomato paste

1 teaspoon sweet paprika 

1 tablespoon molasses 

1 bay leaf

Salt

Pepper

 

Directions:

In a pot add olive oil, and sauté the onions and garlic until tender. 

Add the beans and the rest of the ingredients.Bring to a boil and then simmer for about 2 hours, until the beans are soft and the sauce is thickened.
