Cauliflower Zucchini Patties
If you don't feel like spending a whole day in the kitchen, a vegan burger is a really easy dinner option, made with fresh ingredients, tons of flavor, and vibrant colors!
As long as you serve it with avocado, lettuce and tomato, it's all good :)
It is a very light dish yet still super satisfying, and most of all very healthy!

Ingredients
1 head of cauliflower (or a bag of 2LB) steamed
1 medium zucchini
1/2cup raw cashew (soaked for 1/2 an hour)
2 tablespoon flaxseed meal
1 cup cornmeal - medium grind
1 tablespoon olive oil
2 teaspoons salt
2 tablespoons nutritional yeast
Pepper to taste
Olive oil spray
Directions
Preheat oven to 375 F
In a food processor add all the ingredients listed, and blend until smooth.
Spray a baking sheet with olive oil, use an ice cream scoop to form an evenly sized burgers.
Bake for about 40 minutes, until golden brown.
Let it set for 15 minutes before serving.
Make about 17 burgers.
I served it on a whole wheat bun, I spread vegan mayonnaise, added some kale and spinach for crunch, avocado, capers and tomato.
